This recipe for sweet potato casserole bites is a healthier option to the traditional Thanksgiving sweet potato casserole. You get the flavor of sweet potato casserole without all the extra fat and sugar. Sweet potatoes are packed full of vitamins A, C, and manganese, and also are a great source of fiber. Being considered a super food, sweet potatoes contain antioxidants, anti-inflammatory properties, and blood sugar regulating nutrients.
Sweet Potato Casserole
Ingredients
4 Sweet Potatoes
3 teaspoons melted butter
1 teaspoons cinnamon
4 tablespoons brown sugar
4 teaspoons flour
1 cup finely chopped pecans
Directions
Wash and then cut the sweet potatoes in half length wise. For a bite size serving, cut the potato
halves in half the other direction.
Place the cut sweet potatoes in a lightly greased casserole dish, poke the meaty area of the potato with a fork to make it more tender. In a bowl, melt the butter, then add the other ingredients and mix. Spoon the mixture on top of the sweet potato pieces. Bake at 350 degrees for 30 – 40 minutes. After 30 minutes, poke the potatoes with a fork to check for tenderness.
Not that I think you will have any leftovers, but just in case you do, I suggest reheating in the microwave. This will keep the potatoes moist. Baking them again could dry them out.
