Here is a super quick and healthy Zucchini Supreme spiralizer recipe for lunch or dinner. Leave out the chicken for a delicious vegetarian meal. Customize this recipe by adding any of your favorite vegetables.

Zucchini supreme

Ingredients:

  • 1 or 2  chicken breasts cubed or sliced and then sautéed in olive oil  (**breading optional)
  • 2 spiralized zucchinisHaley's Zucchini Spreme
  • Mama Lil’s Peppers or  1 fresh red bell peppers sliced
  • Diced fresh or canned tomatoes (or marinara)
  • 1 onion sliced
  • 1 clove garlic diced
  • 2 tsp olive oil
  •  salt and pepper to taste – I like to use garlic salt
  • red pepper flakes – use sparingly

Cook chicken in olive oil in a skillet until it is no longer pink, set aside.  Put olive oil in a skillet, add all the vegetables and saute to the desired tenderness. Unbreaded chicken can be added to the skillet for the last few minutes, but breaded chicken should be tossed in after removing the vegetable from the skillet. Salt and pepper to taste.  For an added kick, add some red pepper flakes *caution, use them sparingly.

**to bread the chicken first cut into cubes or strips, dredge in egg wash (one egg whisked and a little water)  and then dredge in bread crumbs.  Then saute in a skillet with olive oil.

Vegetables are an important part of a healthy diet and this recipe is full of them and all the vitamins and minerals they provide.  Zucchini is high in vitamin A, vitamin C, vitamin B6, vitamin K, potassium, iron, calcium, magnesium, and manganese.  It is also very low in sodium and cholesterol and is a good source of dietary fiber and protein. Red bell peppers are very high in vitamin C and a good source of vitamin A, calcium and iron. Tomatoes are a good source of vitamin A, vitamin C, vitamin B6, and vitamin E.  Onions are high in biotin and B1.  With or without the chicken, which is a good source of protein, this is a very quick and healthy meal.
