Honey Almond or Pecan Crusted Salmon
Wow!, is all I can say about this tasty dish. My friend served her Honey Almond Crusted Salmon the other night and right away I knew I needed the recipe. I’ve had almond crusted salmon before, but it was never this tasty. I think the secret ingredient is the honey. This 5 ingredient recipe is simple and will definitely impress your friends and family. This recipe is also excellent with pecans.
Salmon – cut into 1 to 1 1/2 inch steaks with skin on – 1/3 to 1/2 lb. per person
Chopped Almonds or Pecans – 1 cup per lb. of fish
Honey enough to moisten almonds – 2 to 3 table spoons
Olive oil – 1 spoon
A sprinkle of lemon or lime juice
Put salmon skin side down on a baking sheet, dry with a paper towel. Mix almonds, honey and olive oil in a bowl, then spoon onto the top of each salmon steak. Sprinkle with lemon or lime juice. Now bake at 375 degree for 12 minutes, then check for flakiness. If necessary, continue to cook for a couple more minutes, probably no more than 15 minutes total. To achieve a nice golden brown crust, the final step is to quick broil the salmon. Watch while you broil, because the honey can burn very quickly. The honey almond crust would also be delicious on chicken.
